Basque Burnt Cheesecake
Cream cheese, caramelised crust, no base
A cake that celebrates its own imperfection. We bake it in parchment at a very high heat, so the surface caramelises almost to black while the heart remains a soft, trembling custard. Served at cool room temperature.
